Swedish Meatballs
1 egg
1 cup heavy cream
1 slice white bread
1 small onion
¼ tsp allspice
1 tsp brown sugar
1 tsp baking powder
1 ½ tsp salt
1/8 tsp pepper
8 oz ground pork
8 oz ground beef
½ cup finely chopped parsley
1 ½ cups vegetable oil
Remove crusts from bread and tear into small pieces (about 1” sized). In a bowl whisk the egg and add in the cream. Mix the bread pieces into the egg and cream mixture and allow to soak for about 5 minutes. Coarsely chop the onion and place in a food processor. Blend for about 30 seconds (until onion is in very fine pieces). In a stand mixer with a paddle attachment combine pork, onion, allspice, brown sugar, baking powder, salt and pepper and beat for 2 minutes on high speed. Mash the bread, egg and cream mixture with a fork and add to the mixer. Again beat on high speed for about a minute. Add the beef and mix on low speed for about 30 seconds until just combined. Remove bowl from mixer and stir in parsley.
Heat oil in a frying pan on medium-high heat. With wet hands form 1” round meatballs. Add meatballs to the pan and fry on each side for about 5 minutes. When done remove meatballs from pan to a paper towel covered plate. Serve with cream sauce (below) over egg noodles.
Cream Sauce
1 tbsp butter
1 tbsp wheat flour
1 ½ cups chicken broth
1 tbsp brown sugar
½ cup heavy cream
Juice from 1 lemon
Salt
Pepper
Using the same pan as the meatballs were cooked in and reserving the fond (small brown bits) add the butter and melt over medium heat, stirring to pick up the fond. When foaming subsides add the flour and stir constantly for about 30 seconds to form a roux. Add broth, brown sugar, salt and pepper and allow to simmer, reducing to 1 cup. Stir in the cream and add meatballs back to the pan. Add lemon juice just before serving.
Cranberry Sauce
1 lb fresh or frozen cranberries (2/3 cup reserved)
1 cup sugar
1 tbsp orange zest
2 tbsp orange juice
2 tbsp water
Splash of rum
Combine all ingredients in a sauce pan except for 2/3 cup reserved cranberries. Heat over low heat until cranberries are broken down (about 30 minutes) stirring occasionally. Add in reserved cranberries and remove from heat. Allow to cool for 5 minutes.
